CONFIT DUCK, MUSTARD, PEAR

Crispy confit duck leg, glazed with apple sugar and mustard. Served with smoked and poached pear and bitter leaves.

 

CHATEAUBRIAND, BOURGUIGNON GARNISH, BUTTERMILK MASH

Roast chateaubriand of Irish beef with bacon, mushrooms and onions in a rich red wine sauce. Served with sauteed spinach and baked mashed potato. 

 

PRALINE & GINGER CHOUX BUN, GINGERBREAD CUSTARD

Individual choux buns filled with praline cream and stem ginger, and served with a gingerbread custard.
